Chocolate Dipped Joe Joe Cookies
Perfect for holiday gift giving!
This is a pretty simple cookie recipe, well to be honest it is really just decorating store bought cookies, so I am not sure if it is really a recipe.
All you need is a few ingredients:
Chocolate Sandwich Cookies – I used Joe Joe’s from Trader Joe’s but have linked to some you can purchase online.
Gather your ingredients and take the chocolate sandwich cookies out of the package and put on a plate. Lay out your parchment and have sprinkles open and ready to be used, you could pour them in a shallow dish to make it easier to grab them.
Then melt some chocolate, I only needed 8 cookies so I melted about 1/4 cup of white chocolate chips.
I melted my chocolate in the microwave. You do need to be careful when melting chocolate chips this way as they can very easily be over heated and turn into a powdery clump instead of melted chocolate.
Melt for 1 minute in 20 second intervals (stir after every 20 minutes) don’t skip stirring, even if it feels like you aren’t doing anything.
When the chocolate seems almost all the way melted but still has some chunks you are finished and just need to stir enough so that the hot melted chocolate can finish melting the chunks.
Once you have the chocolate ready start dipping.
Let the cookies sit for about 10 minutes so that the chocolate can harden.
I made these cookies so that my son could include them in his gift for his classmates at school. He is making hot chocolate kits.
