A super moist and delicious Chocolate Mug Cake with a surprise inside!
This really is a great recipe for a mug cake, super yummy and super easy to make.

Now that I have mastered the chocolate mug cake I have been exploring other ways to dress up this cake with some surprises on the inside. You can find my traditional chocolate mug cake recipe here, this recipe uses that as a base and adds a little to it.

Add 6 Tablespoons of Chocolate Cake Mix to a medium sized mug. It is best to use a 12 oz mug for this one, the batter doesn’t rise too much and if you use too big of a mug your cake might look a bit small in the cup. Add 4 Tablespoons Milk or Half ‘n Half with 1/2 Tablespoon Mayonnaise to the mug and mix well, I liked using a butter knife, but a fork or spoon would work fine too. Just be sure to mix well, breaking up any chunks of the powder.

Split one of the cookies in half, trying to keep most if not all of the frosting on one half of the cookie. Crumble up the non-frosted cookie half and add to batter, stir in well.

Drop the frosted cookie half, frosting side up into the batter and push down, push down just far enough so that you can no longer see the cookie.

Now here is the tricky part, you really need to know the power level on your microwave. The power level needs to be at a medium high level. I have a 1200 watt microwave with 10 power levels, I used the 9th power level and cooked for 1 minute 10 seconds.

It is also important that you have the correct sized mug, if the mug is too small, you could end up with a bit of a mess in the microwave as the cake will rise quite a bit while cooking. Make sure your mug is no smaller than 12 oz.

Now, the cake IS going to rise while you cook, but will settle down pretty much as soon as the cooking time is over. This is why the size of the mug is VERY important.

I frosted my mug cake with a chocolate frosting and topped with the 2nd Joe Joe Cookie.

Ingredients:

1 Tbs Salted Butter (softened)

4-6 Tbs Powdered Sugar

1/2 -1 tsp water, milk or cream

1/8 tsp Vanilla

Mix the butter with 1 tablespoon at a time of the powdered sugar, adding in the liquid as needed, this will give you a pretty yummy, not too sweet frosting base.

If you want to add some flavor to the frosting I recommend:

1 Tbs Creamy Peanut Butter

1 Tbs Semi-Sweet Chocolate (melted and slightly cooled)

1 Tbs Cream Cheese (softened)

The best part about this mug cake is the surprise cookie baked inside the batter. The Halloween Joe Joe, with the orange frosting is a great version of this cookie as it is very noticeable inside with the bright orange pop of color.

This Mug Cake has a very similar texture to a regular baked cake, and it tastes absolutely DELICIOUS!!!

Can easily be modified and made with a vanilla cake mix, simply use vanilla cake mix in place of the chocolate mix and follow the same instructions.
