A super yummy Chocolate Mug Cake…you gotta try it!This really is a great recipe for a mug cake, super yummy and super easy to make.
It took me quite a few tries to get the right recipe, I used an egg for a few and found the cake to be a bit dense and also difficult to predict, each one seemed to come out a bit differently even though I used the same measurements each time. The mug size and shape also seemed to play a part in how well the cake came out when I used an egg so I came up with this recipe which uses Mayonnaise in place of the egg and oil in a traditional box cake recipe.
Once I master making Mug Cakes from a box mix, I might move onto one of my from scratch recipes and transfer into an individual serving size.
From one box of cake I was able to make 9 Mug Cakes, I did end up with about 1 1/2 Tablespoons of dry mix leftover .
Chocolate Mug Cake
Add 6 Tablespoons of Betty Crocker Cake Mix to each mug. It is best to use a 12 oz mug for this one, the batter doesn’t rise too much and if you use too big of a mug your cake might look a bit small in the cup.
Add 3 Tablespoons Milk or Half ‘n Half with 1/2 Tablespoon Mayonnaise to the mug and mix well, I liked using a butter knife, but a fork or spoon would work fine too. Just be sure to mix well, breaking up any chunks of the powder.
Now here is the tricky part, you really need to know the power level on your microwave. The power level needs to be at a medium high level. I have a 1200 watt microwave with 10 power levels, I used the 9th power level and cooked for 1 minute 10 seconds.
It is also important that you have the correct sized mug, if the mug is too small, you could end up with a bit of a mess in the microwave as the cake will rise quite a bit while cooking. Make sure your mug is no smaller than 12 oz.
Now, the cake IS going to rise while you cook, but will settle down pretty much as soon as the cooking time is over. This is why the size of the mug is VERY important.

*Microwave times may vary depending on your microwave.
*Batter will rise, but will then fall when it is finished cooking.
Now for the frosting…I played around with a few recipes and found a pretty good one that is perfect for 2 mug cakes, or if you really like frosting, use the whole batch!
Ingredients:
1 Tbs Salted Butter (softened)
4-6 Tbs Powdered Sugar
1/2 -1 tsp water, milk or cream
1/8 tsp Vanilla
Mix the butter with 1 tablespoon at a time of the powdered sugar, adding in the liquid as needed, this will give you a pretty yummy, not too sweet frosting base.
If you want to add some flavor to the frosting I recommend:
1 Tbs Creamy Peanut Butter
1 Tbs Semi-Sweet Chocolate (melted and slightly cooled)
1 Tbs Cream Cheese (softened)
My favorite was the peanut butter version of the frosting, it was ABSOLUTELY Delicious!
This Mug Cake has a very similar texture to a regular baked cake, and the taste is spot on, I also tried this recipe with a Red Velvet cake mix and it cooked up exactly like the chocolate…next time I am going to try Rainbow Chip!
